Gourmet meat packages from the Niederhof mountain farm

Situated in the Martelltal/Val Martello high Alpine Valley in the heart of the Stelvio National Park, the Niederhof farm looks out on the spectacular Cevedale Glacier, at above 3,770 m. Run by the Maschler family, this idyllic farmstead is home to various kinds of indigenous livestock: 20 sheep and as many cattle (bulls, cows and calves), 15 pigs and 5 goats.

In summer the animals graze in the mountain pastures, while in winter they’re kept in the stable and in an enclosure, where they can still be out in the open. The snow-covered Martelltal Valley is too cold in the winter months, and the icy slopes pose a danger for the animals. The farm produces its own fodder for the animals, with an added cereal mixture, while the calves are fed on full-cream milk. This creates natural and sustainable livestock management.

In accordance with South Tyrolean tradition, certain animals are slaughtered, depending on the season. But not before they’ve grazed out in the pastures for at least two full years. Slaughtering and butchering is performed on site to avoid unnecessary transport logistics. When processing the meat, no preservatives or additives are used, with the exception of ordinary salt.

Farmer Josef Maschler’s high-grade products must be seen to be believed! They include fresh beef, lamb and pork as well as processed meats such as Speck, Kaminwurzen and salami. He also makes beef, venison or lamb Bündnerfleisch. Various gourmet packages are prepared, comprising traditional specialties such as Speck and Kaminwurzen, as well as fresh Alpine beef and lamb meat.
