Gourmet meat packages from the Niederhof mountain farm
Situated at 1650 metres above sea level in the Martelltal/Val Martello high Alpine Valley in the heart of the Stelvio National Park, the Niederhof farm looks out on the spectacular Cevedale Glacier, at above 3,770 m. Run by the Maschler family, this idyllic farmstead is home to various kinds of indigenous livestock: a few sheep, around 20 cattle (bulls, cows and calves) and 15 pigs .
In summer the animals graze in the mountain pastures, while in winter they’re kept in the stable and in an enclosure, where they can still be out in the open. The snow-covered Martelltal Valley is too cold in the winter months, and the icy slopes pose a danger for the animals. The farm produces its own fodder for the animals, with an added cereal mixture, while the calves are fed on full-cream milk. This creates natural and sustainable livestock management.
Selected oxen and pigs are slaughtered according to the season, as is traditional in South Tyrol. The animals, such as the oxen, have been on the mountain pasture for at least two seasons. Slaughtering and butchering is performed on site to avoid unnecessary transport logistics.
Farmer’s high-grade products must be seen to be believed! They include fresh beef and pork as well as processed meats such as Speck, Kaminwurzen and salami. He also makes smoked meats. Various gourmet packages are prepared, comprising traditional specialties such as Speck and Kaminwurzen, as well as fresh meat from Alpine oxen.
